Broccoli, Cauliflower and Pasta Gratin
Serves 2
Ingredients
75g pasta shells
1small head of broccoli, cut into florets
½ small cauliflower, cut into florets
25g low fat margarine
25g flour
½ pt semi-skimmed milk
75g grated mature cheddar cheese
2 tomatoes, sliced

Method
1.Place pasta shells in a pan of boiling water and cook until just soft.
2. Meanwhile prepare broccoli and cauliflower steam or cook until just tender, about 5-6minutes.
3. Make cheese sauce by melting the margarine, adding flour, cook for one minute, then gradually add the milk mixing all the time. Return to the heat and bring to the boil. Add most of the grated cheese and mix.
4. Place the pasta shells at the bottom of an ovenproof dish and place the broccoli and cauliflower on top. Pour over the cheese sauce, sprinkle over remaining grated cheese and place sliced tomato around the edge of the dish. Place under a low grill and cook until cheese bubbles. Serve.
