Baked Mackerel with Beetroot Tzatzki
Ideal to serve as part of a romantic meal on Valentine's Day a recipe that is good for the heart...
Serves 2
Ingredients
2 beetroot, cooked
2 tbsp horseradish sauce
1 garlic clove, crushed
1 tbsp chopped dill
1 tbsp chopped mint
125g/4oz low fat Greek-style yoghurt
2 level tsp ground cumin
Juice of a lemon,
2 medium-sized mackerel, filtered
2 tbsp chopped parsley
Ground black pepper
Method
1. Preheat the oven to 220C/425/Gas7.
2. Peel and grate the beetroot into a bowl.
3. Add the horseradish sauce, garlic, herbs, yoghurt, half the cumin, half the lemon juice and some black pepper. Mix well, and then put to one side.
4. Place the mackerel fillets on a greased baking tray or lined with baking paper and season with black pepper.
5. Bake for 4-5 minutes, until the flesh is white and flakes easily.
6. Place immediately on pre-warmed plates and sprinkle over the parsley and lemon juice. Serve with the beetroot tzatziki.
To accompany this, serve with broccoli florets and boiled baby potatoes in their skins.
