Lemon Crusted Trout


Easy, healthy, a good source of omega-3s. Serves 2.
 
Ingredients
 
2 trout fillets
25g breadcrumbs
1 dessertspoon butter, softened
1 small bunch of parsley, chopped
Zest and juice of half lemon
2 lemon wedges using the other half of the lemon
15g pine nuts
1dessertspoons olive oil

Method


1. Heat the grill on high and lay the fillets skin side down, on an oiled baking tray.
 
2. Mix together the breadcrumbs, butter, parsley, lemon zest and juice, and half the pine nuts. Scatter the mixture over the fillets, drizzle with oil and place under the grill for 5 minutes.
 
3. Sprinkle over the remaining pine nuts and serve with lemon wedges, salad and baby potatoes or lemon flavoured cous cous.
 
This can be made in the microwave. Place the fillets in a microwaveable dish, add topping, cover completely with a cling film and microwave for 2 minutes on high. For a crispy top, place under a hot grill for 1 minute.
