Spanish Fish Parcels


(Serves 2)
 
Quick, easy and cooked in the microwave
 
Ingredients
 
300g coley, cod or haddock fillet, cut into 2 pieces
2 teaspoons olive oil
½ each red and green pepper, cored, seeded and chopped
2 spring onions, chopped
1 large tomato, skinned, seeded and chopped
1 celery stick, chopped
1 clove garlic, crushed
black pepper to taste
flat leaved parsley to garnish (optional)
 

Method


1. Place each piece of fish on a large piece of greaseproof paper.
 
2. Mix the remaining ingredients together in a bowl, cover and cook on HIGH for 2 minutes. Divide between the fish.
 
3. Wrap each piece of fish in its paper to make a parcel. Place in a dish and cook on HIGH for 3-4 minutes. Allow to stand for 1minute.
 
4. Unwrap each parcel and carefully lift the fish onto a warmed serving plate. Spoon the vegetables on top. Garnish with flat leafed parsley to serve.
