Salmon Lasagne


A delicious fish dish to make for a change
 
(Serves 2)
 
Ingredients
 
1 small leek, thinly sliced
25g margarine
25g flour
1/2pt milk
75g grated mature cheese
213g can of red or pink salmon
4-5 sheets of lasagne
50g peas or sweetcorn
25g fresh breadcrumbs

Method


1. Preheat the oven to 190c/170c fan/Gas 5.
 
2. Place the sliced leek into a shallow microwaveable dish add 1 tablespoon of water, cover with cling film and cook in the microwave on high for 1min to soften.
 
3. Make the cheese sauce by melting the margarine in a saucepan and add the flour. Gradually add the milk a little at a time. Bring the sauce gradually to the boil to thicken, stirring well to avoid lumps. Remove from the heat and add the grated cheese. Stir.
 
4. Flake the salmon. Line the dish with a layer of lasagne. Layer on top with half the leeks, half the flaked salmon and peas. Pour over one third of the cheese sauce.
 
5. Repeat with a layer of lasagne, leeks, salmon, peas and cheese sauce.
 
6. Finally cover with a layer of lasagne and pour over the remaining cheese sauce.
 
7. Mix the breadcrumbs and cheese together and sprinkle over the sauce.
 
8. Place the dish on a tray and cook for 30 minutes until golden and bubbling. Serve with green vegetables or a green salad.
 
Fresh cooked salmon can be used instead of tinned. Parsley or white sauce can be substituted for the cheese sauce.
