Lemon and Banana Crunch
(Serves 2)
Ingredients
2 small bananas, peeled and sliced
2tsp lemon juice
200g low fat Greek yoghurt
3 tbsp. lemon curd
2tbsp demerara sugar
Method
1. Preheat the grill. Toss the bananas gently in the lemon juice until all slices are coated. This will stop them from going brown. Put in two ramekins or small heatproof dishes.
2. Mix together the yoghurt and lemon curd then spoon over the bananas. Level the tops and place the ramekins on a baking tray.
3. Sprinkle the sugar evenly over the tops then grill until bubbling and caramelised. Remove carefully, cool, and then chill for 30 minutes before serving.
Handy Hints
Sliced peaches and nectarines, strawberries and raspberries are also good in this recipe; and you can use low fat creme fraiche instead of yoghurt.
Caramelised sugar is very hot so take care not to touch it.
