Sweet and Sour Chicken with Rice


(Serves 2)
 
Ingredients
 
1 tablespoon of vegetable oil
2 chicken breasts, diced
1 small tin of pineapple chunks in natural juice
1/2 teaspoon of ground ginger
1 tablespoon of vinegar
1 tablespoon of sugar
1 tablespoon of tomato sauce
1 teaspoon soy sauce
1 teaspoon cornflour
1/4pt water
125g easy cook long grain rice
 

Method


1. Heat the oil in a frying pan. Add the diced chicken and ginger and cook for 5 minutes or until the chicken turn's white. Add the drained pineapple cubes and cook for a further 2 minutes.
 
2. Meanwhile mix together the juice of the pineapple, vinegar, sugar, tomato sauce, soy sauce, cornflour and water.
 
3. Pour over the chicken and pineapple and heat slowly, stirring occasionally until it thickens.
 
4. Reduce the heat and cover with a lid or a double piece of foil and cook gently for 20 minutes.
 
5. Meanwhile, cook the rice by adding to boiling water and simmer for the required time (see instructions on the packet). Strain.
 
6. Serve on a warm plate with the sweet and sour chicken.
 
This can be accompanied with a selection of stir-fry vegetables.
