Fruity Cous Cous


A refreshing alternative to rice perfect with salad and savoury dishes.
 
Ingredients
 
175g cous cous
1/2pt apple juice
Pinch of mixed herbs
1/2 teaspoon ground coriander (optional)
1 small red pepper, chopped
1 small green pepper, chopped
1 red onion, finely chopped
1 stick of celery, finely sliced (optional)
50g raisins, sultanas or chopped dried apricots
2 tablespoons of sweetcorn
2 slices of pineapple, chopped

Method


1. Place the cous cous in a bowl.
 
2. Pour the apple juice in a glass jug and heat in the microwave until boiling. Pour over the cous cous. Leave to stand for 10 minutes.
 
3. Meanwhile prepare the fruit and vegetables.
 
4. With a fork fluff up the cous cous to separate the grains.
 
5. Add the mixed herbs and coriander and stir.
 
6. Add the green and red peppers, red onion, celery, dried fruit, sweetcorn and pineapple and mix thoroughly.
 
7. Place into a serving bowl. This can be covered and kept in the refrigerator.
 
Serve with grilled meats, fish or top with asparagus for vegetarians.
