Pear and Blackberry Upside Down Pudding
This warming fruity pudding can be made either in the microwave or oven. (Instructions are given for both methods)
(Serves 4)
Ingredients
100g/ 4oz golden syrup
1 lemon
100g/ 4oz blackberries
3 ripe pears , peeled, cored and quartered
For the cake:
100g / 4oz butter, softened
100g / 4oz light muscavado sugar
100g / 4oz self-raising flour
2 eggs
3tblsp milk
Method
1. Lightly butter a 20 cm/ 8in microwave cake dish.
2. Spoon the golden syrup over the base of the dish, then sprinkle over the lemon rind. Scatter over the blackberries and pears, cut side up.
3. Beat together all the cake ingredients until light and fluffy.
4. Spoon the mixture over the fruit and level the top.
5. Microwave on High for 12 minutes until the cake begins to come away from the sides of the dish. Stand for 5 minutes, then loosen the edges and invert on to a plate. Serve warm with custard or low fat crème fraiche.
6. If you don't have a microwave , preheat the oven to 180C/350F/Gas 4. Make the cake as for the microwave, but leave out the milk. Bake for 35-40 minutes. Cool in the tin for about 10 minutes before turning out.
